I have a big family - four kids, and we are always coming and going. We need a lot of food, fast! Many of our meals are quick - or crock - by necessity. I had my kids vote on the recipe to share and was surprised (and relieved) when they loved more than a dozen but finally chose the quickest - and tastiest - crock pot meal:
PULLED PORK
Ingredients:
2.5 Kg Pork Shoulder (not too fatty - talk to your butcher the first time)
500mL Cold Water (enough to sit 2.5 - 3cm in bottom of pot)
2-3 small cooking onions cut into rings
1L barbeque sauce of your choice (we choose a basic sauce - it has a nice sweet and vinegar flavour)
(You can season: garlic, chili powder, herb vinegar, and paprika but I have to admit, I use none of it)
Cook on high for 5 hours
Equipment:
Crock Pot or Dutch Oven
Sharp Knife
Cutting Board
Measuring Cup
Wooden Spoon or Whisk
Two Dinner Forks
Bowl
Process:
1. Put pork shoulder in crock pot and cover with 2-3cm water
2. Cut onions into rings
4. Cover and cook for 5 hours on high.
5. After you finish cooking the pork, pull it out of the pot, cut it into large chunks. Put chunks in a bowl.
6. Pour barbeque sauce into watery onion mixture (which is why you don't want your pork to be too fatty).
7. Stir.
8. Put pork, by section, onto cutting board and pull apart using two forks. Once each section has been pulled, put back into pot into sauce mixture.
9. Once finished, cover pot and heat on low for an additional hour.
10. Done! Serve on toasted hamburger buns and a side of salad or steamed broccoli or green beans. My kids like cut up chunks of raw celery and carrot sticks. Delicious!
If you need to make any measurement conversions, use this site, and it should make things easy - not that you'll ever need measurements for any recipe I make. I love cooking only because measuring is optional. Baking? Not so much. You may need the site for your journey!
